At last… Summer. Or what feels like summer, judging by these blissful temperatures late into the evening and the sudden abundance at the farmer’s market! I didn’t really post a May seasonal recipe roundup because May really felt more like March here in Maryland, and so none of the produce you usually get around that time of year was available. Instead, we now have a May / June mashup / explosion of flavor.
Seasonal foods in late May / early June include: arugula, asparagus, green beans, snap beans, beets, broccoli, cabbage, carrots, cherries, corn, cucumbers, fava beans, garlic scapes, green onions, herbs, kale, kohlrabi, lamb, lemons, lettuce, limes, mackerel, mint, mushrooms, pea shoots, peas, snow peas, potatoes, radishes, rhubarb, spinach, strawberries, and zucchini!

Although I don’t do much cooking-from-recipes this time of year because I’d rather be outside, and eating fresh produced grilled or in salads as a meal is tempting when there are suddenly so many delicious fresh veggies available (I’m not ashamed)… Here are a few of my in-season go-to favorite recipes from Pinterest (in no particular order):
